It’s Sunday evening as I am writing up this week’s menu. I always find it helpful to sit down with my calendar and look over the upcoming week’s events before creating a menu. Evening meeting? That calls for a quick meal or something I can put in the slow cooker earlier in the day. Afternoon appointment? Again, something fairly simple for dinner. Planning ahead is essential for me with our busy schedule. Otherwise we’d likely end up eating out far more often than we’d like.
Dee’s Menu
Monday
David has a firefighter meeting so dinner will be late. It’s helpful to make something which is easy to keep warm.
- beans
- cornbread
- fresh fruit salad for “dessert”
Tuesday
I have an afternoon hair appointment so I’ll keep dinner simple.
- grilled brats in deli sandwich rolls
- homemade coleslaw
- french fries
- fresh fruit
Wednesday
We have a meeting at 5 p.m. I don’t want to eat out afterwards so the next best thing is dinner in the slow cooker (or the slow cooker function of the Instant Pot).
- roast
- potatoes, onions, carrots
- green beans
- homemade biscuits
Thursday
I love the occasional “veggie dinner” during the summer when I can get super fresh produce at the farmers market.
- corn on the cob
- sliced tomatoes
- squash casserole
- tossed green salad
- fresh fruit
Friday
- stroganoff (made with leftover roast)
- noodles
- salad
- peas
Saturday
We have a music event to attend. I think we may go out to dinner first.
Sunday
Mexican food after church; something light after “Music in the Park”.

Can I come to dinner Thursday? 😉
Yesterday (Monday) I had cheesy potato wedges. Today I’m having “eggy-dogs” (hot dog buns with scrambled egg where you might have hot dogs, topped with hot dog fixings). I haven’t figured out the rest of the week.

You learn to be creative when you’re the only vegetarian among a family of meat-eaters. It’s one of those meals where it’s not much hastle to make my modified version, and – if you don’t know, and don’t look closely – it seems like we’re all having the same meal. I don’t always bother to match my meals with what others are having, but hubby was having hot dogs that night, and it made me want a vegetarian version. I prefer substituting with egg or some kind of vegetable rather than buying actual veggie dogs and veggie purgers, to be honest.
I didn’t buy veggie meat substitutes that year we ate vegetarian. I did like you or occasionally made my own black bean burgers.
There is not better meal than beans and cornbread, that is one of our favorites. Hope you and your family are ok and did not have damage from the horrible tornado that came to your part of the country. Have a good week and thanks for sharing!

We are fine, thanks! I’m trying to get back into the habit of “meatless Mondays” and beans are an easy choice for that. I buy beans in bulk so we always have plenty on hand.

You dinner ideas sound so yummy! I especially love a good pot roast slow cooker dinner. I am making a big batch of beans today!
I’ve got the roast seared and now cooking on the slow cooker setting of my Instant Pot. It already smells good! What kind of beans are you making? As soon as I get enough room in my freezer I plan to cook several types of beans and freeze in meal-size portions. So much cheaper and tastier than canned!
