It looks as though we’ve got something going on almost every night this week. That makes menu planning a bit challenging!
Dee’s Menu
Monday:
David has a firefighter meeting at 6 and it’s likely to be a lengthy one. I’m hopeful that he can make it home from work early enough to eat dinner before he goes. I had red beans in the freezer so I put them in the refrigerator to thaw yesterday. All I will have to do is make rice, cornbread and a salad.

Tuesday:
We have a board meeting at 5:30. We are going to do our best to keep it to just one hour. Still, that means cooking dinner sometime close to 7 p.m. I think this will be a good night for my old standby for quick dinners.

Wednesday:
I haven’t made it to choir rehearsal in ages. Every week either something comes up (last week David’s boss was in town) or I find myself still working at the time I need to leave. I’m really going to try to manage my time better and make it to choir!
- One Pot Chicken and Rice

Thursday:
I have a board meeting at 5:30 but hopefully we will be done in an hour. I think I’ll mix up the waffle batter before I go. The rest won’t take long. David can man the waffle maker while I cook the sausage and eggs.

Friday:
I think this would be a good time to try one of those Pinterest recipes I said I’m going to make.
- Pork Loin in Cognac Sauce
- mashed potatoes
- asparagus (if I can find some)

Saturday:
I think there will be enough various leftovers that I won’t have to cook. I’ll just make up a fresh salad to go with whatever else we are eating.
Sunday:
Lunch out after church – save half for dinner.

Added your menu idea of homemade tomato soup and quesadillas to my monthly meal planning journal sheet this month. Since having to go gluten free, it is difficult to find canned tomato soups with no gluten. I will definitely be trying your recipe. Thanks so much for the idea and the recipe.

WOW! You really do have a busy week this week! Hope all goes to plan with everything.
Here’s my menu…
Monday: pineapple fried rice with cashew nuts and sweet & sour sauce.
Tuesday: I’ll just do cheesy fries, because I’ve got some stuff I want to work on, and we halso have a grocery order coming this afternoon.
Wednesday: root vegetable mash with cauliflower cheese and peas.
Thursday: I have roleplaying, so I’ll make sure there are leftovers from Wednesday’s dinner to just heat up after my game.
As usual, I haven’t decided what I’m doing for the other three days of this week yet.
