Here it is, Sunday evening and I’m planning my menu for the week. Believe it or not, I don’t think either of us have any evening meetings this week! I have choir rehearsal Wednesday night but otherwise, it looks like we will be home every night. Maybe I can even get caught up on some things. Hey, a girl can dream, right?

Wednesday
I have choir rehearsal so an easy meal is in order. I’ll cook the “Mexican Style Meat” in the crockpot and use part for sandwiches and save the rest for enchiladas on Thursday.

- The BEST EVER Enchiladas (Pinterest recipe)
- Mexican rice
- salad
Friday
- Chicken with Cherry-Wine Pan Sauce
- brown rice
- broccoli
- salad
Saturday
If I actually cook every night all week I think I’ll get David to take me out for dinner. 🙂
Sunday
Mexican food after church, save half for dinner.

I hope your quieter week does allow you to get caught up on some things, and cook every night through the week to earn your dinner out on Saturday. 🙂
Here’s my menu:
Monday: I was still at my Dad’s, and brought us all Indian food. Mine was vegetable curry and chips (as in fries).
Tuesday: I travelled home yesterday, and by the time I was home I was extremely tired and not very hungry, so I just had some cheesy fries.
Wednesday: I was going to be cooking something properly, but I’ve spent the day alternating between sleeping, doing laundry, and trying to catch up on e-mails, so I’m just grabbing a veggie burger and some salad.
Thursday: the cheesy mash and broccoli I originally planned to make tonight (luckily, it’s not a roleplaying week for me).
Friday: leftovers from Thursday.
I haven’t decided about Saturday and Sunday yet.

I adore Indian food but haven’t cooked any in quite awhile. I think I will put it on my menu next week. Thanks for the idea!
