I made gumbo last night which uses several of the same ingredients I’ll need in the red beans. While I was chopping veggies I went ahead and did enough celery and bell pepper for the beans, too. I also cooked enough rice for tonight as well. I soaked the beans overnight and will cook them in the crockpot. Since Monday is my big cleaning and laundry day it will be nice to have such as easy-to-prepare dinner.

- Black Bean Enchiladas
- chips and salsa
David will be out of town until late so I’ll just make myself something simple (salad or smoothie).
Lisa and I are going to Oklahoma City for our big, monthly grocery shopping trip. I suspect we will be fairly late getting home so David will be on his own for dinner.
