I have meetings on Monday and Thursday evenings so I’m planning ahead for those. For tonight – Monday – I’ve already boiled the chicken carcass, strained the broth and picked off the meat. I’ll probably go ahead and prep the carrots and potatoes before I go, and mix up the dry ingredients for the dumplings. On Thursday, I’ll put the casserole together and have it ready for David to put in the oven so it will be done by the time I get home.
I’ll be posting more about it later but I’m doing a very minimal shopping month so I can use up what’s in my freezers and pantry. Basically I won’t be buying anything but fresh produce and dairy.
Monday:
I somehow picked up a stomach virus Thursday night and spent the weekend just resting and feeling a little “blah”. My mom offered to bring us dinner Saturday night which was absolutely wonderful. She roasted a chicken and also made mashed potatoes and candied carrots. We ate from it that night and for lunch yesterday. Tonight I’m using the carcass and little leftover bits of chicken to make chicken and dumplings. I’ll use the last few potatoes and carrots in it, too. I pick up our co-op order tomorrow so I’ll have a fresh supply at that point.

Friday:
Because I was sick I didn’t cook the pork chops listed on last week’s menu for Friday. Guess I’ll try again!
