My hubby has been working crazy hours, so I’m on my own a lot of evenings now – which means I just eat whatever is leftover, or even just some cheese and crackers and fruit. Tonight I had a bowl of carrot-ginger soup. Tomorrow I am making ricotta meaballs, but we won’t have them until Wed and I’ll serve them polenta. Another dish I want to make this week is rice noodles with crisp veggies (matchstick carrots, peapods, cucumber) with a scallion-ginger sauce. Hope you have a good week!
Last night (so, Monday) I had mac and cheese with garlic bread. Tonight (Tuesday) I’m having cheesy bean melts. I haven’t gotten any further than that with my plans for this week though.
We haven’t had mac and cheese for awhile. I may very well put that on next week’s menu. And I must hear more about those cheesy bean melts. Sounds yummy!
Grab a flat bread, sprinkle a light dusting of cheese on top, add some beans and sauce of your choice (depending on the type of beans you’re using, you may want to cook them first; just lightly fry them if you’re using anything other than a can of beans in tomato sauce) and then top with some more cheese. Stick it on a tray in the oven, and cook until the flat bread starts to get crispy, and the cheese melts and begins to brown (about ten to fifteen minutes).
