David and I have a new routine we started this week. We grab a cup of tea or coffee and sit at the kitchen table to sort through the week’s mail and paperwork, as well as plan our week ahead. This was a good time to start this as we have a total of five meetings, a doctor appointment, choir rehearsal and a business trip between us. It’s nice to start the week knowing what lies ahead for each of us. Plus, it makes it a lot easier for me to plan the week’s menu!
Dee’s Weekly Menu Plan
Monday
David and I each have meetings this night. Mine is at 5:15 and his is at 6:00 p.m. Guess that means we’ll be eating late.
- gumbo in the Instant Pot (didn’t get around to making it last week)
- rice
- corn bread
Tuesday
David is going on a business trip. It’s our son’s 33rd birthday which we already celebrated last Friday. I’m going to take him out for sushi, something David isn’t keen on anyway.
Wednesday
David will still be out of town and I have choir rehearsal at 7 p.m. I’ll likely just make myself a salad or a sandwich.
Thursday
I have an early evening meeting then David is going to meet me in town for “Date Night”.
Friday
- Spaghetti Carbonara
- tossed green salad
- garlic bread
Saturday
- quesadillas
- Homemade Tomato Soup
Sunday
Mexican food after church and save half for dinner.

I’ve really been enjoying mine. There are a few different models. This is the one I have: http://amzn.to/2iWp1LE I especially like the fact I can saute or brown something and then switch to pressure cooker or slow cooker settings all in the same appliance. Anything that saves washing another pot is a winner in my book!

It’s always a good idea to sit down and figure out what’s planned for the comming week in regards to appointments, mettings, etc.
Anyway, here’s my menu for this week:
Monday: Cheesy fries.
Tuesday: Vegetarian shepherd’s pie with sprouts.
Wednesday: Leftovers from Tuesday’s dinner.
Thursday: Scrambled eggs and hash browns.
Friday: Tomato soup and fresh bread.
Saturday: Pumpkin risotto (adapted from your butternut squash risotto recipe).
Sunday: There may be leftovers from Saturday, in which case I’ll have those. Otherwise I’ll figure something out on the day.

Your menu looks really good. David loves “breakfast for dinner”. I should put that on my menu next week. Do you make your hash browns from scratch or buy frozen? I have done both but this is one thing I often “cheat” on and buy frozen.

I usually buy the frozen ones. I have made them from scratch in the past, but I don’t usually bother to do so.
