David will be out of town Tuesday through Friday afternoon and then we are hosting a going-away party for our son’s friend on Saturday. That doesn’t leave a lot of need for me to cook much this week. But here goes, anyway:
Monday:
My niece made a delicious salad for her July 4th party and I’ve now made it twice myself. David and I both love it. I still have enough ingredients to make it again tonight. I have an early evening meeting so a quick-to-prepare meal when I get home is a plus. In order to turn this salad into a main dish I will add some cooked chicken breast to each portion.
- Patriotic Salad (my made-up name for it) – mixed greens, sliced strawberries, fresh blueberries and poppyseed dressing, all gently tossed together. As mentioned above, I’ll add some chicken tonight.
Tuesday – Thursday:
I ran across a link to a collection of salad recipes, many of which sound really good. I think I’ll try a couple of these for my evening meals while David is out of town. I’ll share the recipes later.

Friday:
David will be home and no doubt ready for a home-cooked meal.
- pork chops
- baked potatoes
- fresh green beans
- salad
- peach pie (if I can get some from the farmers market this week)
Saturday:
This is the day of the going-away party. I figure we’ll have the grill set up so everyone can cook whatever they want. I’ll probably do burgers.
Sunday:
Sunday Family Dinner – maybe? Depends on how tired everyone is after the party the night before. Most will probably be camping out here overnight Saturday. We’ll just play it by ear.

Nothing exciting planned this week, though I do have another meeting on Wednesday. It's earlier this time though, so I should have the energy to make something more than toast for dinner this time. 😉
Here's what should be my menu for the week… Unless I end up with a week like last week, when the plan for the menu gets thrown out the window…
Monday: veggie burger and fries.
Tuesday: home made pizza.
Wednesday: cheesy fries with vegetable gravy (since it will be something quick and easy to make after the meeting).
Thursday: veggie kabobs.
Friday: pasta with sauce (probably tomato sauce, but I haven't decided for sure yet).
Saturday: baked potato with cauliflower and broccoli cheese.
Sunday: not sure yet.
