Well, once again we didn’t quite stick to our menu last week. Right now I can’t even quite remember why. Oh, yes. Our meeting on Monday ran quite long so David wanted to go out for dinner afterwards. And then on Tuesday his salesman was in town so we took him out to dinner. Then David was out of town until late on Wednesday. Or was that Thursday? I do know that I fixed a nice dinner Friday, although it wasn’t something from our menu. I bought a whole organic chicken which I cooked in the crockpot. I served it with baked potatoes, salad and corn on the cob. Wait. It was Friday that David got home so late – we ate dinner after 8 p.m. So what did we do Wednesday and Thursday? Hmm…I know I had a meeting Thursday night. Oh, I remember. David left on Thursday and got home Friday. See what our life is like around here? Ha!
Anyway, I have no illusions about this week going as planned but let’s give it a whirl.
Monday:
I’m making broth from the leftover chicken carcass, a couple of carrots, celery and onion. I’ll put these ingredient in the crockpot before I leave for a 2 p.m. meeting this afternoon. When I get home I’ll strain and refrigerate it. That will allow me to remove the excess fat on top before using it to make the broccoli cheese soup.

Tuesday:
David leaves on Tuesday for a business trip and won’t be home until Thursday afternoon. I like to eat a little lighter and have simpler meals while he’s gone. Chris can join me or pick up something for himself these two nights.

Wednesday:
- a big salad with hard boiled eggs, fresh tomatoes and grated cheddar cheese

Thursday:
- gumbo (never did make it last week)

- French bread
