What a crazy busy time we’ve had the past couple of weeks! But fun, too. We have a lot going on this week, too, but I’m trying to get us back to a slightly more sane schedule and actually eat at home. We’ll see how it goes.
Monday:
- salad
- steamed broccoli with grated cheese on top
- squash casserole
- slice fresh strawberries
Tuesday:
We are attending a singalong in the park so I thought a picnic supper would be fun.
- tuna sandwiches on rolls
- grapes and cherries
- red bell pepper slices with ranch dip
- chips
- iced tea
Wednesday:
- lentil rice casserole
- served rolled up in flour tortillas
- lettuce, tomato, salsa, sour cream
- tortilla chips and guacamole
- fresh cherries
Thursday:
This is David’s birthday. We’ll be celebrating on Saturday but we’ll have his favorite cherry pie on his actual birthday. I might even make some homemade ice cream to go on top.
- grilled burgers
- homemade potato salad
- fresh fruit salad
- homemade cherry pie
Friday:
We will be going out but not until 9 p.m. so I’ll fix dinner at home first.
- baked lemon pepper chicken
- brown rice
- salad
- green beans
Saturday:
We are celebrating David’s birthday with friends and family at one of our local restaurants were we book music via Happyland Music Alliance. The show starts at 9 but we may go early and eat there first.
What’s going on with you? Are you starting to enjoy more “summery” meals? I’m loving the fresh fruit that is starting to be available in my area. I can’t wait for peaches!
