Monday:
I don’t usually cook on Sundays but since David had spent a few hours out in the heat mowing I thought he deserved a nice dinner. I grilled a big package of organic chicken tenders with my homemade bbq sauce. I had nearly half a bag of potatoes which were sprouting so I made them all into mashed potatoes. I also cooked some corn on the cob and asparagus. I have quite a bit of chicken and a lot of potatoes left which means an easy dinner tonight.
- salad with sliced bbq chicken and homemade bleu cheese dressing
- baked mashed potatoes topped with grated cheese
- fresh cherries
Tuesday:
This is our church’s night to provide the meal and serve at Compassion Outreach, a local organization which provides free medical care to those in need, as well as a hot meal and access to a clothes closet. I haven’t decided what I’ll make yet but since I bought 10 pounds of rice recently I’m thinking:
- Spanish rice
Wednesday:
I have a cabbage and a fresh pineapple on hand so I think Chinese food sounds like a good plan.
- homemade egg rolls
- fried rice
- homemade sweet and sour sauce with fresh pineapple
Thursday:
I have a 5:30 meeting so I need something that can be pulled together quickly when I get home. That’s when a slow cooker meal comes in handy.
- roast, carrots, potatoes and onions (in crock pot)
- salad
- rolls
Friday:
A friend mentioned making Frito chili pie the other day which reminded me of something my mom used to make but we haven’t had in ages.
- taco salad
- fresh fruit
Saturday:
- grilled hot dogs
- homemade coleslaw (from the rest of the cabbage I used for egg rolls)
- baked beans
