Busy, busy week ahead! Lots of friends and family are in town for a week-long celebration (Ada Connection) our extended family hosts every 5 years. There are activities and various group meals planned all week. We can’t attend everything but we are going to go to several events. Plus, our daughter’s birthday is Wednesday and it’s the 4th of July on Saturday. Looks like I’ll be doing very little “real” cooking this week.
Monday:
- homemade mac and cheese with caramelized onions
- glazed carrots
- salad
Tuesday:
I am going on the family shopping trip which is the morning scheduled event for “Ada Connection”. I then am volunteering for a couple of hours at the local soup kitchen where I serve on the board and also have an evening meeting. I think dinner will have to be super quick and easy!
- quesadillas
- tomato soup
Wednesday:
It’s our daughter’s birthday so we are all going out for a nice dinner in a nearby town.
Thursday:
Dinner and talent show for “Ada Connection”.
Friday:
We will be attending a banquet for “Ada Connection”.
Saturday:
It’s the 4th of July and we are going to my niece’s for a BBQ and then watch the fireworks at the park.
Sunday:
We will most likely go to church then out for Mexican food for lunch. We always save half for our dinner.

My menu…
Monday: veggie burger and fries.
Tuesday: veggie kabobs with sweet chilli sauce.
Wednesday: Mac and cheese.
Thursday: veggie fingers, mashed potatoes and mixed veg.
Friday: leftovers from Thursday.
Saturday: cheesy egg and bean wraps.
Sunday: cheese and onion pasty, fries, and beans.

It's been quite warm here, so – as you can see from the above post – I'm trying to keep both the prep work and the cooking simple.

It's been unseasonably cool here for July (warm but not brutally hot). Usually by now I'm looking for meals that don't require a lot of cooking.
