I’m finally finishing this up late Sunday night. We’ve had a bit of excitement around here. A severe thunderstorm made its way through our area and brought baseball size hail and a tornado or two with it. We spent some time under our stairs with poor Shiloh who was terrified. Our roofs took quite a pounding so it’s pretty likely they’ll need to be replaced. We’ll know more tomorrow. But everyone is safe so that’s the important thing.

Tuesday
Lisa and will be doing our monthly grocery shopping so our guys are on their own for dinner.
Wednesday
Saturday I took a big bowl of Taco Frito Salad to a potluck. There wasn’t a single bite left and several people raved about it to me. I haven’t made it at home in quite awhile and since I only got a few bites at the potluck I thought I’d put it on the menu this week.
Thursday
- quiche
- tossed green salad
Friday
I think we will be going to the city to see a live show…assuming we can get someone to watch Shiloh.
Saturday
- grilled cheeseburgers
- homemade potato salad
- baked beans
Sunday
We haven’t made it to church in ages for a variety of reasons so I hesitate to say this. However, I’m hopeful. Assuming we go, we’ll eat Mexican food afterwards and save half for dinner.

I am loving my Instant Pot. Not only is it a pressure cooker but it can also be used as a slow cooker. The best part is that it also has a sauté feature so I can brown meat in it first then switch to slow cooker. That means one less pan to wash…always a good thing!

Poor Shiloh must have been shaking in his paws! Mind you, I expect you and David were at least a little scared too? I’m glad none of you were hurt.

Yes, poor Shiloh was shaking. I sat there with my arm around him trying to reassure him. As for David and myself, we have a healthy respect for these storms but we weren’t really scared. Fortunately we knew where the tornado was (about a mile away) and where it was heading. Now, if we had been in the direct path it would have been a different story!
As for the quiche, our plans changed and we went out to dinner with our niece who is moving, and our kids. I probably would have used a variety of veggies and plenty of cheese, though.

The quiche sounds great. Haven’t made one in so long. I think that wil be on next week’s menu.
