This week’s menu features Brazilian Black Beans, Chicken Caprese and “Busy Day Swiss Steak”. Then things get busy and that’s the end of cooking for me for the week.

Monday

Tuesday
- Caprese Chicken
- steamed Yukon Gold potatoes

- carrots
Wednesday
- Busy Day Swiss Steak
- mashed potatoes
- peas
- salad
Thursday
We have a meeting late afternoon which may run until 6 p.m. I think we’ll just plan to eat in town.
Friday
We are involved in a community film and new media festival which begins this day. It kicks off with a private dinner with John Waters for sponsors which we will be attending, followed by his keynote speech then music by one of our bands.
Saturday
Day Two of the festival. David will be working with musicians and I have a convention to attend in OKC. I’ll be back late afternoon/early evening. There are food trucks at the festival so we’ll just grab dinner from one of those.
Sunday
I suspect we will be exhausted so I’m not planning to cook. We’ll pick up something or make sandwiches.

Hope the meeting and media festival go well.
I had pineapple and cashew fried rice with sweet and sour sauce for dinner last night. Since I know I’ve got something going on this afternoon that will be keeping me busy leading up to dinner time, I made sure there were leftovers from it for tonight, so I can just heat them up when I get a chance to eat this evening. To be honest, I haven’t thought beyond that point just yet, so I have no idea what’s on the menu for the rest of the week.

So how do you like your instant pot? I’m debating whether I need one. I have a crock pot and I have a stove top pressure cooker. I use the crock pot more than the stove top pressure cooker but I’m wondering if I might use an instant pot more often if I had one. It’s so hard to decide.

I really like mine. I like the fact that I can sauté or sear in it first then set on slow cook or pressure cook…all in one pan. I find it especially good for beans. A slow cooker works well for beans, too, but you have to start them early in the day. I haven’t tried it yet myself but my daughter uses hers to cook a whole frozen chicken. I did use mine once to cook a small frozen ham and it worked great.

Sounds like you are having a very busy week and a fun one. I love your Swiss Steak with Mashed Potatoes, I’ll tell you I could eat a plate of that right now for breakfast, it sounds so good! Hope you have a fantastic weekend and thanks for sharing!

We ended up not having that after all. By the time my son and husband managed to maneuver my huge desk down the stairs and into my office it was getting late. Then my husband had to go pick up sound equipment and set it up for an event. He finally brought home take-out at almost 10 p.m. Some days are like that. Ha!
