As I look ahead to this week I’m not sure how much point there is in making a menu. We have a LOT going on, which you’ll see below. But I still like having a plan. So let’s take a look at what is happening in my household this week.
Dee’s Menu
Monday/Tuesday:
David will be out of town on business. I’ve recently heard about an eating plan that involves two days a week of very low calorie meals. With David gone I figure Monday and Tuesday would be a good opportunity to give this a try. I’m going to make a big pot of vegetable soup for these two days.
Wednesday:
David will be home late afternoon or early evening. I have a meeting at 5:15 and choir rehearsal at 7. I’ll just stay in town in between. Since I won’t be home until after 8 p.m. I figure a crockpot meal is in order. That way David and Chris can eat whenever they are ready.
- roast in the crockpot along with onions, potatoes and carrots

Thursday:
Our town is starting a new event on the first Thursday of each month and this will be the first one. We will be having live music and food trucks in the Arts District by the university. We are providing the music through our Happyland Music Alliance organization so of course we want to be there to make sure it all goes well. We’ll eat from the food trucks for dinner.
Friday:
It’s not definite but our son-in-law mentioned having us over for dinner on Friday. If that doesn’t happen I’ll make something from the leftover roast.
Saturday:
I’m going to take my mom to Norman (a little over an hour away) for Indian food for lunch. She and I love this particular restaurant but it’s not a favorite with David or my dad. This will be my early Mother’s Day gift to her. David and I are attending a music event in the evening. I’ll do something easy before we go.

Sunday:
It’s Mother’s Day and my kids are taking me to a fancy meal after church at a new local venue. We are providing the live music via our business. We won’t need anything heavy for dinner.

- fresh fruit

Yesterday (Monday) was Kelly’s birthday, and I promised him his choice of take-away so he didn’t have to cook (especially since yesterday was the May Day bank holiday, so even if he wanted to eat out, it wouldn’t have been a good idea to try, since the places that were open would have been packed). Today (Tuesday) we’ve been invited out for afternoon tea, and since any kind of outing tires me out, I know I’m not going to be up for cooking when I get home. So we ordered Chinese food last night, and are having the leftovers from it tonight.
Tomorrow (Wednesday) I’m having cheesy mashed potato with broccoli.
I’m not sure about the rest of the week. Thursday roleplaying is changing to a Tuesday (though since three of the four of us who play this one can’t make it this Tuesday due to other commitments made before the change was proposed, there isn’t any roleplaying session this week) and there’s no Saturday game this week (that one’s only about every three weeks). So, I don’t need to allow for any of my roleplaying games this week. I’m still not sure what I’m going to have for dinner from Thursday onwards though. I might make another attempt at getting that somerset minted egg pie made… We’ll see.

You have a really busy week! Mine is busy, too plus my hubby changes shifts on Wed., so he won’t be around for dinners unless he has a day off. He’s home tonight so we’re having a baked pasta dish (GF quinoa pasta). That’s all I have planned. Like I’ve mentioned before, I mostly fly by the seat of my pants. 😉 Saturday night, we’ll be eating out as that is the evening of our son’s BFA Art Show, We’ll be celebrating with him and some family members. I love that you are sharing a good take-out Indian meal for your mom! I always save that type of meal for my mom too! I also am a bit jealous of the food-truck meal- love that! Have a great eating week!
I’m really looking forward to the Indian food. It’s actually a sit-down restaurant. They do an amazing lunch buffet which I love because we get to have a little bit of lots of things. I’m hoping the food trucks will be good. I haven’t tried any of the ones that will be there but I’ve heard good things about one in particular. Thanks for stopping by. Have a beautiful week!
