I never did get around to making those oatmeal pumpkin cookies last week but hopefully I will find time this week.
Monday:
Busy day! I just got home from a hair appointment, I have a meeting at 6 and then David has to leave around 8. I’m going to make the gumbo and then put the covered pot in the oven on a low temperature. before I go to my meeting. I’ll put the rice in the rice cooker, too. That way everything will be ready when I get home from my meeting and David is home from the gym.

- fruit salad (pineapple, mandarin oranges, banana)
Tuesday:
David will be out of town on business so I’ll have leftover gumbo.
Wednesday:
Another busy day. David goes to the gym after work and I have choir rehearsal at 6:45. We’ll probably pass on the road. My plan is to cook up the bean mixture earlier in the day (black beans, onion, bell pepper, garlic, homemade taco seasoning, frozen corn) and refrigerate. I’ll also grate the cheese, cut up a tomato and wash the lettuce. We can each fix our own whenever we need to. I’m going to make up extra bean filling and then make up some burritos to freeze for David’s lunches.

Thursday:
I didn’t end up making this pasta dish last week so it’s on the menu again.
