Did you enjoy last week’s Menu Monday ~ 1940s Style? We had so many leftovers that I didn’t end up making everything planned so you’ll see a couple of repeats in this week’s menu.
Dee’s Menu
Monday
I have a 5:15 meeting and David has one at 6. I think I can time this so we can eat as soon as he gets home around 7.
- Lentil Rice Casserole
- baked potatoes
- tossed green salad with Homemade Thousand Island Dressing
Tuesday
- tacos made with leftover lentil rice casserole
- chips and salsa
- lettuce, tomato, cheese, green onions, sour cream, hot sauce for the tacos
Wednesday
I have a meeting in OKC at 1 p.m. and hope to meet up with my cousin afterwards. David is playing cornhole at 6 p.m. I’ll put dinner in the slow cooker before I leave and we can each eat whenever.
- roast, onions, potatoes and carrots in slow cooker
- biscuits (I’ll bake them in the morning and we can reheat them.)
Thursday
- Tamale Casserole (I didn’t get around to making it last week.)
- crisp coleslaw in tomato cups
Friday
I’ll use the leftover roast beef for this meal.
- stroganoff
- egg noodles
- Tomato-Cheese Green Beans (from last week’s menu)
Saturday
We will be out of town.
Sunday
A friend down the road from us gave us a dozen eggs from their chickens so I think “breakfast for dinner” sounds like a great idea.
- French toast
- scrambled eggs
- bacon
- orange juice, coffee or tea

Nice menu. Sometimes I like to have breakfast for dinner too. Did that recently with some tofu breakfast wraps. I’ve also seen people having stuff you’d normally think of as dinner items for breakfast, so… *shrugs*
Anyway, here’s my menu:
Monday & Tuesday: mushroom pie with mash and peas.
Wednesday: baked potato with cheese and chives, plus fresh veggies.
Thursday: pasta with veggies and sauce.
Friday & Saturday: spinach and mushroom quiche with boiled potatoes and green beans.
Sunday: BBQ jackfruit wraps with sweet potato wedges.
I wouldn’t normally have pie and quiche intentionally planned during the same week – especially when they have ingredients that are partially identical – but I had a similar thing happen to me last week as what happened to you, where leftovers happened where they weren’t planned, so I didn’t end up making the mushroom pie last week. But I’d already planned to do my first attempt at veganizing my spinach and mushroom quiche recipe this week, and had everything coming for it in the scheduled shopping order, so… *shrugs*
