Monday:
I’ve got bananas at just the perfect degree of ripeness so there will be homemade banana pudding for dessert tonight! I have a 6 p.m. meeting so I’ll have everything prepped before I leave and the pizza dough rising. When I get home I can add the toppings and have it in the oven in just a couple of minutes. I prefer banana pudding chilled so I’ll make it earlier in the day and refrigerate.

Tuesday:
This is my big monthly grocery shopping day with my daughter. We are planning to make the additional trip to OKC so we can go to Whole Foods so it will likely be a very long day. I may pick up something easy to prepare at Whole Foods.
Wednesday:
David needs to go out of town either tonight or Thursday. I think a big pot of soup that can be reheated for lunches makes sense. If he’s here, great. If not it will keep for a couple of days.
- potato soup with diced, cooked bacon
- homemade rolls, bread or biscuits
Thursday:
If David isn’t home I’ll save this for another time and just make myself a salad or something simple.
- black bean tacos
- Mexican rice with tomatoes, corn, chilis
Friday:
- roasted chicken
- Zucchini, Squash and Onion casserole
- salad
Saturday:
We have an afternoon wedding to attend and a formal party to attend at night. I have no idea how the day will unfold. We may eat out in between the events or we may just eat leftovers. In any case, I feel certain there won’t be the time or inclination to cook a big meal.
