It felt like fall here this weekend with high temperatures in the low 70s. This week’s weather looks absolutely perfect with daytime highs in the mid-80s and overnight lows in the 60s. Can we just keep this year round, please? We have a busy week ahead and it looks like I’ll only be cooking twice. It’s probably not even worth writing this menu for you but I’ve linked to a couple of good recipes you might want to try.

DEE’S MENU
Monday
David’s brother, Rick and wife, Linda from California will be here tomorrow for a short visit. I know we will have a lot of last minute things to do so I’m going to make it easy on myself and order pizza. I will make a salad to go with it.

- Garlic Lemon Herb Mediterranean Chicken + Potatoes

Wednesday
We’ll all go out to dinner at our favorite local Italian restaurant.
Thursday
Our monthly music and food truck event was postponed last week due to rain. We’ll eat dinner from the food trucks.
Friday
- Smothered Pork Chops (Instant Pot)
- rice
- carrots
- tossed green salad
Saturday
We are attending a birthday party for a friend and there will be food there.
Sunday
The new stage at our local park is finally finished so we’ll be doing Music in the Park . In addition to the live band there will also be food trucks.

Tuesday looks delicious! How do you like your instapot. I keep hearing mixed feelings from everyone I know. I want one but maybe I will just borrow my friends when I need it LOL
I really like it! It doesn’t replace all other cooking methods, in my opinion, but it’s excellent for some things. I buy dry beans of various kinds in bulk and they cook really quickly in the Instant Pot. It’s also great for cooking meat you’ve forgotten to thaw. If you can borrow a friend’s I would try a few things in it first before deciding if it’s a good fit for you.
Temperatures have cooled off here too. Mostly we’re in the 60s, which is fine by me.

Ummm…. I do feel a tad guilty reading your Monday menus, however, as I mostly cook for myself, and do not plan. However, I should really get over the guilt and just do It!!! Because, actually even I need to plan….. and looking at this post it all suddenly made sense.
I can totally see how it might not seem worth planning just for yourself but I think it could still be helpful. For instance, by planning a week at a time you can make sure to get a good variety of nutrients in your diet. It might be tempting to just eat whatever sounds good on a particular night, or repeat things too often otherwise. I try to make sure to get a good variety of vegetables, as an example, over the course of the week.
