Monday:
I’ve got a hair appointment at 1:00 p.m. and hopefully will be going swimming with my daughter afterwards. That means I need a quick-to-prepare meal when I get home around 5:30. I’ll cook and refrigerate the rice before I leave for my hair appointment so that when I get home I can throw together a casserole pretty quickly.
- Mexican Vegetarian Casserole
- green salad
- chips and salsa
Tuesday:
David will be out of town for the day and won’t be home until late. I’ll probably make myself a salad for dinner.
Wednesday:
Lisa and I will be doing our monthly grocery shopping. In fact, my mom has finally decided she’s had enough of Walmart so she’s going with us, too. Since I never know what time we’ll be home after these trips (and because I’m usually tired!) I don’t plan dinner. David’s a big boy and doesn’t mind fending for himself once in awhile. 😉
Thursday:
I have a 5:30 meeting and then will be picking up my first order with the Oklahoma Food Co-op afterwards. Again, I’ll need something quick afterwards.
- Grilled cheese with ham and pineapple
- homemade tomato soup
Friday:
David and I are going with friends to see a concert at a casino about 45 minutes from here. There is a hotel as part of the casino so we plan to spend the night. If David can get off work in time we’ll meet everyone for dinner before the show.
Saturday:
Breakfast for dinner!
