It’s still quite warm here yet I’m starting to think about cool-weather meals. In fact, I’m even going to make chili on Monday. But check out what I’m serving with it. Yes, we’re on the cusp of a new season so our menu is going to reflect that with the last of summer produce served alongside heartier autumn dishes.

Monday
Meatless Monday
- vegetarian chili
- corn on the cob
Tuesday
David and I have a late afternoon meeting in town so we’ll eat out afterwards and call it “date night”. Maybe we’ll go see a movie if there’s anything good playing.
Wednesday
I’m hopeful that I’ll make it to choir rehearsal this week which starts at 7 p.m. That’s always a good reason to plan an easy dinner.

- rice
- salad
Thursday
- Sour Cream Green Chili Enchiladas
- leftover rice (add Mexican seasonings)
- chips and salsa
Friday
- Chicken in French Mustard Cream Sauce
- glazed carrots
- baked potatoes
- salad
Saturday
We have company coming next week and will no doubt be working on some household projects this weekend. Simple dinner…to the rescue!
- Homemade Tomato Soup
- grilled quesadillas
Sunday
We’ll probably eat at our favorite Mexican restaurant and then save half for dinner.
