I hope you had a great weekend. Ours was a lot of fun…and rather busy. That’s why I’m just now getting this Menu Monday post done. We have a lot of activities coming up this week, too, so I’m not going to be cooking much. I’ll include some additional links in case you need some meal planning inspiration.
MENU MONDAY
Monday
David and I will be setting up for an event that takes place Tuesday so I need something I can cook and keep warm until we get home.
- Creamy Vegetable Chowder ~ An Instant Pot Recipe (recipe will be on the blog Wednesday)
- cornbread
Tuesday
We will be attending a local event called Taste of Ada. It’s a food tasting event so we will eat dinner there. We are providing the music.
Wednesday
David and I have a meeting at 4:30, he is playing cornhole at 6:30 and I have choir rehearsal at 7:00. There is not enough time to go home for dinner in between those activities so we’ll eat dinner in town. I’m hoping the meeting isn’t very long so we’ll have time to drive across town for sushi. Fingers crossed!
Thursday
This will be our final East End Eats of the 2019 season and we’ll eat dinner at one of the food trucks.
Friday
At home date night! As of right now we don’t have anything we have to attend this evening.
- Chicken Cachofino (I’m going to try to replicate a restaurant dish David and I both love. If it works out I’ll share it.)
- vegetables
- Italian bread
- tossed green salad
Saturday
David is setting up and running sound for a local event. We’ll eat at that venue because, again, there isn’t time to work in dinner at home.
Sunday
This evening will be our final Music in the Park of the season. We added one additional show because the weather is still so nice and we still had sponsor money available for another band. We’ve moved the time back an hour, from 5 to 7 p.m. David will start setting up the sound system at 3 p.m. and won’t have it taken down until about 8 p.m. Looks like one more dinner out afterwards.
See what I mean about not cooking much this week? Next week should be better. I only know of one evening event with a meal but who knows what will actually happen?

Here’s my menu for this week:
Monday: veggie pizza.
Tuesday & Wednesday: root vegetable mash with green bean cassarole.
Thursday & Friday: mediterranean vegetables with couscous.
Saturday & Sunday: baked potato with salad.
Ooh, that sounds like a great menu! I haven’t made pizza in ages.
Neither have I. I cheated. There’s a place near us that delivers vegan pizza. 😉
We live too far out of town to get delivery and it seems the only time we think to pick up pizza is if we are feeding a crowd here. I really like pizza, though. I need to put that on the menu next week.
