Here it is, time for another Menu Monday post already. I’m starting to get back into more of a routine as our outdoor live music season winds down. We have just a couple more scheduled events the next few weeks and then our lives will be less hectic – I hope! I look forward to more time in the kitchen and new recipes to share here on the blog.

Yesterday I had the vegan version of a “cheesy” broccoli and cauliflower soup. I made it in the slow cooker Sunday, and had it for Dinner Sunday and Monday. Most of the rest of this week is going to be involving salads of one kind or another. Starting from next week I’ll be figuring out proper meal plans again, since it’s time to start thinking beyond salad (especially with the weather starting to get cooler).

I love making a big batch of something in the slow cooker then having leftovers. Makes life a lot easier.
