David will be out of town on a business trip through Thursday so I won’t be planning any elaborate meals this week. Chris and I are the seafood eaters so I think I’ll cook some of the Gulf shrimp I’ve got in the freezer. And I think I have a couple of tilapia fillets so perhaps I’ll put those on the menu, too.
Monday:
- blackened tilapia
- brown rice
- corn on the cob
- salad
- peach cobbler
Tuesday:
Chris will be out with friends tonight so I’ll just eat leftovers from last night.
Wednesday:
- fettuccine with shrimp in cream sauce
- sautéed yellow squash, zucchini and onions
- salad
Thursday:
- corn noodle casserole
- glazed carrots
- green beans
- salad
- corn bread or rolls
Friday:
- tacos made with refried black beans, cheese, lettuce, tomato, sour cream
- Spanish rice
- chips and salsa
Saturday:
- date night
