I know I’ve not been doing a good job posting here recently. We’ve been gone so much and busy whenever we are home. I don’t see that changing much the rest of the month but come January I plan to devote some significant time to this blog. I have some guest posts coming in January which you won’t want to miss. I also have some good resources I want to share, as well as several of my own recipes. So bare with me and we’ll get through December with our sanity intact. Maybe!
David left on another business trip today and won’t be back until late Wednesday night. That’s always a good time for Chris and me to enjoy a meal of seafood – in this case, shrimp. I’m also keeping meals deliberately simple this week as I have a lot going on and absolutely HAVE to make time to finish up my Christmas newsletter, the December issue of my “Tea With Dee” newsletter, and decorate the house. So here’s what we are eating this week:
Monday:
- tacos with refried beans
- Mexican rice with corn, tomatoes, green chilis
- salad
Tuesday:
- shrimp
- brown rice
- broccoli
- salad
Wednesday:
- homemade mac and cheese with caramelized onion topping
- green beans
- salad
- rolls
Thursday:
- vegetable soup or gumbo
- corn bread
Friday:
- baked potatoes with broccoli and cheese
- salad
- homemade bread
Saturday:
- Frosted cauliflower
- whiskey glazed carrots
- salad with hard boiled egg wedges
- homemade bread
