Yet another busy week! My daughter and I are making a quick trip to the nearest city this afternoon to pick up our organic turkeys we ordered, as well as a few last-minute ingredients for our Thanksgiving meals. We plan to be back in time to prepare dinners for our households so I’m going with something quick and easy tonight. In fact, I’ll keep it simple through Wednesday because I’ll be doing so much cooking for Thanksgiving. We will be celebrating Thanksgiving at my cousin’s house along with our huge extended family. I’ve signed up to provide mashed potatoes, homemade cranberry sauce and a pie or two. Then on Friday I will cook my own complete Thanksgiving meal for our immediate family. We should have LOTS of yummy leftovers.
Monday:
- pasta with creamy vodka tomato sauce
- salad
- homemade garlic bread
Tuesday:
- broccoli cheese soup
- corn bread (will make extra for dressing later this week)
Wednesday:
- quesadillas
- homemade tomato soup
Thursday:
- Traditional Thanksgiving meal with my large, extended family. I’ll be taking mashed potatoes, homemade cranberry sauce and a pie or two.
Friday:
- turkey
- mashed potatoes
- dressing
- sweet potato casserole
- cranberry sauce
- salad
- rolls
- green bean casserole
- pies
Saturday:
- delicious leftovers – the best part of Thanksgiving!
