I’m back! My friend and I had a fabulous trip to New Orleans last week. I will be sharing drool-worthy food pics and descriptions later, plus a blog post about a very special little shop in the French Quarter. But for now, here is what’s on the menu for the Piercy family this week.
Monday:
- red beans and rice
- potato salad
- corn bread
Yes, I’m missing New Orleans!
Tuesday:
- catfish
- coleslaw
- French fries
We have a very nice little meat market here in town which gets some absolutely amazing catfish fillets. I’m hoping they have some this week.
Wednesday:
- lentil soup
- cheese biscuits
I still haven’t made the lentil soup I’ve had on the menu the past couple of weeks. David will be out of town and I have choir rehearsal on Wednesdays so this is a good night for a simple soup that I can make early in the day and reheat.
Thursday:
- out to dinner with David’s boss
David will be back from his short business trip and his boss will be in town. We will go out to dinner at our favorite Italian restaurant.
Friday:
- tacos
- guacamole salsa and chips
There’s a slight chance that David might have to take another short trip on Friday in which case I’ll save the tacos for next week and just make myself a salad.
