I don’t want to say it too loudly but it looks as though this week will be a little less busy than recent weeks. I’m hoping to get some extra baking done, as well as a few more complicated meals than we’ve had lately. Next week is crammed with various activities and meetings and then the holiday season is upon us. Ready, set, go!
Monday:
- Vegetarian Enchilada Casserole (crockpot) (didn’t make it last week)
- salad
- oatmeal pumpkin cookies (new-to-me recipe — If they’re yummy, I’ll share the link.)
I’ll also be baking some banana bread since I have some very ripe bananas to use up.
Tuesday:
- Sweet and Sour Meatballs (David’s favorite and something I haven’t made in a long time)
- rice (will cook extra and save for fried rice and gumbo later this week)
- salad
Wednesday:
- Frosted Cauliflower
- glazed carrots
- green beans
- homemade bread or rolls
Thursday:
- homemade egg rolls
- fried rice
- fresh fruit
Friday:
- gumbo
- potato salad
Saturday:
It’s supposed to be a beautiful day so I’m thinking one final use of the grill before we cover it up for the winter.
