Another week, another Menu Plan Monday! Between business trips, meetings and other activities, it looks like I’ll only be cooking two nights this week. I’m looking forward to things (hopefully!) slowing down soon. I’m ready to have time to bake bread again and do some experimenting in the kitchen. I do plan to try something new tonight in my Instant Pot. If if turns out well I’ll share the recipe later this week.
Dee’s Menu Plan Monday
Monday
- Easy Jambalaya in the Instant Pot
- salad
- French bread
Tuesday
David will be out of town and there should be plenty of leftovers.
Wednesday
David returns late. I’ll likely make a smoothie or something easy before I go to choir rehearsal.
Thursday
We have a late afternoon meeting in town. I think we’ll just stay in town for dinner and call it “date night”.
Friday
- baked chicken
- mashed potatoes
- green beans
- salad
Saturday
We have a crazy, busy day of activities in town for which we are in charge of the live music. We’ll catch a bite to eat somewhere in the midst of it all.
Sunday
Mexican food after lunch – save half for dinner.

Brian’s working tonight and tomorrow night – we have plenty of leftovers in the fridge, so I’m all good. Thursday is our anniversary and we’ll probably take a day trip, so will be eating out. So that only leaves Wed and Fri to think about. Crazy day on Friday with a doctor’s appt and vet appt for one of my cats, both in the afternoon, so will probably put something in the Crockpot in the morning.

OK, short version here, because I got some kind of error message, and now my comment appears to have vanished.
So, basically, I have a menu planned, but how well I’ll stick to it depends on the heat, since I already changed my plan for Tuesday when I was too tired and hot after roleplaying this afternoon to do more than send hubby to the nearest place that does fries, eat them, and go for a nap.
Yesterday (Monday) I had mushroom crisp bakes with garlic potato wedges.
The plan for the rest of the week is:
Wednesday: Pasta with sauce.
Thursday: Veggie bake.
Friday: Mushroom pie with mash and veggies.
Saturday: Savory cheese crispy pancakes with baked potato and veggies.
Sunday: Italian vegetable stacks with roast potatoes and veggies.
