Crockpot Fajitas sounds interesting (in other words what did you put in your crockpot?)!! Are you still digging out of your freezer and pantry? I don’t have a very large freezer so I have nearly reached the back.

Well, the crockpot fajitas didn’t work out. I had a package of fajita meat in the bottom of my freezer but it was a couple of years old. I thought it might still be okay since it was vacuum sealed but when I thawed it, I didn’t like the way it smelled. Of course, it could have just been that I don’t like the smell of food in general in the mornings. (g) In any case, I didn’t want to take a chance so I threw it out. I made Ham in Cream Sauce over linguini instead.
If I had made the fajitas it would have involved the fajita meat (you can use beef or chicken) and a bag of frozen peppers and onions (for stirfry). I then season it to taste with salt, pepper, chili powder, garlic and cumin. Mix seasonings in about 1/2 cup of chicken broth and pour over the meat. Cook until meat is done and serve with warm flour tortillas, sour cream, shredded cheese, salsa, etc.
As for the digging out of the freezer and pantry, yes…to a certain extent. I’ve allowed myself to purchase ingredients for something specific once in awhile, though. For instance, it was warm and sunny on Saturday. Our son mentioned that grilled hamburgers sounded good so I sent him to the meat market specifically for ground beef and hamburger buns.
I do still need to find a good time to cook the turkey in my freezer, as well as continue to use up other things. Thanks for the reminder!
