THIS WEEK WITH DEE
Instead of music, let’s enjoy the peaceful sounds of an autumn afternoon on the porch. It’s a gorgeous day here in Oklahoma with temperatures in the 70s. It won’t last but I’m enjoying it while I can!
MENU:
Monday…
We didn’t have the pork chops on Friday because we went to the city. Fortunately I had not thawed them yet so we’ll have them tonight.
- pork chops in sour cream sauce (Instant Pot)
- roasted red potatoes
- corn salad
- steamed broccoli & cauliflower
- cranberry sauce
Tuesday…
- taco salad
Wednesday…
I have a large freezer bag with leftovers from a corned beef I made several weeks ago. It also contains potatoes and carrots. I’ll put it in the slow cooker and make soup out of it.

Thursday…
Do you ever watch Mandy in the Making on YouTube? She showed a recipe for Greek chicken and vegetables cooked together on a sheet pan and it looked delicious. I’m going to give it a try.

IN MY HOME:
REVIEW OF LAST WEEK
In last week’s post I mentioned that I would be helping my mom get my dad admitted to a nursing home. However, shortly before our meeting with the director we got word that they had a resident test positive for Covid that morning. I called my mom to suggest we reschedule only to find out she had already changed her mind. She’s just not quite ready to make that decision.
I did pick up a few groceries for her on Monday and then stayed with my dad about 2 1/2 hours on Tuesday while my mom got her hair done and ran a couple of errands. I will likely be doing more of that in order to give her a break.
On Thursday, I got a text from my sweet husband asking if he could take me to our favorite hotel in OKC for the weekend. Umm…YES! We left early Friday afternoon and came home Sunday. It was a lovely and much-needed getaway.
THIS WEEK
My main household goals this week include planting the tulip bulbs I bought and vacuuming/mopping floors. I don’t even want to admit how long it’s been. We don’t wear shoes in the house and we no longer have a dog but still…
WORK
I need to create a Facebook event for our nonprofit, catch up on email, and write at least one or two blog posts. I’m still working on NaNoWriMo. Well, let’s say I intend to work on it. We also have a meeting of the executive board of our nonprofit on Wednesday afternoon. I need to get the minutes of our last meeting typed up beforehand.
READING
I’m still reading The Midnight Library. I also started another book but it’s in the library and I’m in my office. Hopefully I’ll have finished it by next week and I’ll give you the title then.
SELF CARE
Top of my list: give myself a manicure and a pedicure.
HEALTH & FITNESS
I want to be more intentional about my intake of fruits and vegetables. We do pretty well with dinner but I need to add more to breakfast and lunch.
FUN ACTIVITIES
It’s in the 70s today and tomorrow so this would be a good opportunity for some star gazing. I also hope to get in a movie night or two.
HABIT OF THE WEEK
David and I are actually doing a bit better going to bed at a reasonable hour. He talked me into buying a tv for our bedroom, something we haven’t had for years. We now try to go to bed early enough to watch an episode of Ted Lasso and one of The Dick Van Dyke Show. Having a specific plan like this has been surprisingly helpful.

I’m glad you’re able to stay with your Dad sometimes so your Mom can have a break now and then. And nice you were able to get away for a couple of days. Glad the going to bed earlier plan is working.
As for my week…
Monday: work on some writing/publishing tasks. pumpkin pasty with chips and peas for dinner.
Tuesday: gaming and dinner with Dad, followed by a Zoom interview. Vegetable stew with fresh bread for dinner.
Wednesday: catch up with some online tasks. Vegan poutine for dinner.
Thursday: going to Mam’s to help her with some stuff. Eating out for dinner.
Friday: Zoom book club. Sweet & sour tofu with rice and veggies for dinner.
Saturday & Sunday: crafting and reading. Haven’t decided about dinner.
However, it’s now Wednesday, and only Tuesday has actually happened as planned, so I might end up using some weekend time to get to some of those writing/publishing tasks and catching up on some of the online stuff. Not all of it though, because I do also need to get the craft projects and reading time in.

Sheet pan/one pot dinners are amazing. I made a Sheet Pan Cashew Tofu dish this week that was SO good- better than the last few takeouts we’ve had.
