THIS WEEK WITH DEE
I meant to have this posted yesterday but the day got away from me. So here we are, better late than never, right?
David and I were in Belize week before last. We had such a wonderful time with good friends. The guys did quite a bit of fly fishing while we “girls” relaxed and read with a lovely view of the ocean. It was also the perfect place to celebrate my birthday.
But now we are working on getting back into routines, while David continues working on remodeling our bathroom.
MENU:
Monday…
This planned meal didn’t happen. I took my mom her groceries, dinner and cat food then didn’t get out of there until after 7 p.m. I knew it would be close to 8:30 if I tried to drive home and cook this meal so I picked up chicken strip dinners at Braum’s instead. You’ll likely see this on next week’s menu.
- Chickpea Potato Curry and rice
- coleslaw (leftover from last night)
- sautéed spinach
- naan bread
- apricots
Tuesday…
I’ve got the lentils in the Instant Pot, keeping warm until dinner.
- Lentil Tacos
- Spanish rice
- quacamole
- tortilla chips
Wednesday…
- baked cod (chicken for David)
- baked potatoes
- mixed vegetables
- salad
Thursday…
- Busy Day Swiss Steak
- mashed potatoes
- carrots
- salad
- rolls
Friday…
- turkey shepherd’s pie (using leftover mashed potatoes from Thursday)
- salad
Saturday…
- leftovers
Sunday…
- grilled cheese sandwiches
- tomato soup (I have a couple of cans I want to use up before I restock for the winter)
- fruit
THIS WEEK
Monday…
I took a gift by to a friend, picked up my weekly grocery order and some food for my mom. I need to take the food, groceries and cat food that I ordered to my mom shortly. David has a board meeting for the volunteer fire department so dinner will be late. The weather is perfect so I’m hoping to get a bit of stargazing time in tonight.
*As mentioned above, these plans were altered a bit due to extra time at my mom’s. David and I were both exhausted so we went to bed a bit earlier than usual and watched an episode of The Gilded Age in addition to our usual bedtime episode of Leave it to Beaver.
Tuesday…
I had a Zoom call today and it went almost three hours.
The sheets are in the dryer so I’ll need to get them back on the bed before bedtime. I also washed the cats’ bedding and did a little vacuuming.
We are trying to get back into our evening leisure time schedule. Tuesdays are supposed to be the night we listen to a vinyl record album together in our library. Chris bought me a new album for my birthday so I’m really looking forward to listening to it.
We will likely tune in to watch at least part of the debate tonight.
Wednesday…
I need to do some house cleaning and write grocery haul blog posts (last week’s and Monday’s).
Thursday…
I’m going to the OKC museum to see the Edith Head exhibit. My son will be up there for a couple of days and he’s meeting me at the museum along with three of his friends. I think my daughter is going to ride up with me. I’ve really been looking forward to seeing this exhibit!
Friday…
I’d like to see Charlotte, even if we just pick her up and take her for ice cream. It will depend on David’s work schedule.
Saturday…
David will be working on the ongoing bathroom remodeling project. Poor guy has been working so hard. I’m not sure what my project for the day will be.
Sunday…
I’d like to set aside at least a couple of hours to just read. No other distractions, no housework, no social media…just read.
READING
Finished…
I had lots of time to read in Belize so I finished this one:
The Most Fun We Ever Had by Claire Lombardo (beautifully written and quite emotional in parts)
And read two more:
A Place to Hang the Moon by Katie Albus (loved it!)
100 Ways to Live a European Inspired Life by Fiona Ferris (a quick read by a favorite author)
Currently reading…
Trust by Hernan Diaz (one of the books David bought me for my birthday)
Stormy Days on Mulberry Lane by Rosie Clarke (#7 in the Mulberry Lane series)
David and I started listening to an Audible book while driving home from Houston after our trip to Belize. I looked for something relatively short and something David would especially enjoy. It’s about fly fishing, not a topic I would necessarily choose for myself but it’s actually quite good. It’s well-written and humorous in parts. I’ll admit that when he started getting in the weeds about specific flies and other details about fly fishing, I’d let my mind wander or check my notifications on my phone. However, the descriptions of the beautiful places he fished and stories about interesting people captured my attention. If you have a fly fisherman in your life, I can definitely recommend this book:
All the Time in the World by John Gierach
We also listened to:
The Truths We Hold by Kamala Harris (well-written account of V.P. Kamala Harris’ life as the daughter of immigrants and her rise as a political leader)
Other books ongoing…
The Country Diary of an Edwardian Lady ~ Edith Holden
An Incomplete Education ~ Judy Jones and William Wilson
On our May trip to New Orleans, David and I listened to two audiobooks on Audible:
The Last Madame: A Life in the New Orleans Underworld by Christine Wiltz (This was fascinating!)
Make Your Bed: Little Things That Can Change Your Life…And Maybe the World by Admiral William H. McRaven
If you don’t already have Audible, you can get a free trial here. We’ve definitely been enjoying it on long drives.
SELF CARE
I need to do both a manicure and pedicure.
HEALTH & FITNESS
I’ve gotten out of my morning exercise routine since David started working on our bathroom. I have to come downstairs to use the bathroom and get dressed instead of exercising upstairs first. It’s just thrown off my whole routine. But that’s simply an excuse. Since the weather is so nice I think I’ll focus on walking outdoors instead.
FUN ACTIVITIES
I’ve got a new coloring book I’m looking forward to starting:
I really want to get in some stargazing time over the next few weeks while the weather is nice.

I am SO excited you are going to see the Edith Head exhibit before it leaves. You are going to LOVE it so much! If I wasn’t working, I’d love to join you all and see it again. Your trip to Belize sounds like it was wonderful and relaxing. And, of course, now I have several more books to add to my TBR list, thanks!
