A few years ago we spent a year eating a vegetarian diet. A friend had been diagnosed with Stage 4 cancer and was undergoing some alternative treatments, including a vegan diet. As a “meat and potatoes” guy, he was struggling with this. We decided to go vegetarian as a way to demonstrate our support.
During that year I found a lot of delicious vegetarian recipes and also altered many of our family favorites to be vegetarian-friendly. Even though we are no longer vegetarian, we still eat many meatless meals. All those recipes I adapted? I’ve kept them vegetarian because we like them every bit as well as the original versions.
Dee’s Vegetarian Recipes
Some of you know that I used to have a food blog called “Dee’s Kitchen”. Most of these recipe links I’m going to share were originally posted there. They need to be reformatted and most need photos. However, I decided to go ahead and pull the links all together in this post now instead of waiting until I get them all updated.
I originally started “Dee’s Kitchen” simply as a place for me to collect all my recipes and to have an easy way to share them when someone asked. They weren’t intended for a public audience so please excuse the lack of consistent formatting and often vague directions. I’m going to start going through this list and updating them one by one.
This will always be a work in progress as I will continue to add new vegetarian recipes to this post. If you have any questions about a specific recipe, don’t hesitate to ask.

Note: A number of these recipes call for chicken broth but in all cases, vegetable broth may be substituted. That is why I included them in this list. Keep in mind that most of these are vegetarian, not vegan.
I can’t wait to click on these links and check out the recipes. We eat a lot of vegetarian meals, too. I used to eat mostly vegetarian until I discovered I can’t digest legumes anymore…no beans, no lentils, no split peas. I’m still very bummed about this, because those were some of my favorite foods.
