Welcome to the LWD blog feature – “A Dozen Dinner Ideas“. We can all use some dinner inspiration occasionally, right? I love seeing what others are serving their families so I thought I’d return the favor. Once a month I share a dozen meals we’ve had lately and I hope you’ll get an idea or two.

A DOZEN DINNERS
Here are a dozen dinners we had in our home recently. I hope you find inspiration for your own dinners!
I try to always keep a bag of Parmesan Herb Encrusted Chicken Tenders from Aldi in my freezer. It’s handy to have them on hand for an easy dinner.
- Parmesan herb encrusted chicken (Aldi)
- baked potato with butter, sour cream, shredded mozzarella
- candied carrots
- mixed vegetables
- cranberry sauce
David is always happy when I make breakfast food for dinner.
- eggs scrambled with onions & peppers, topped with grated cheese and hot sauce
- sausage links
- toasted bagel
- canned peaches
- hot chocolate
I cooked a large chicken breast and barbecue sauce in my slow cooker until it was tender enough to shred with a fork.

- homemade coleslaw
- French fries
- stir fried veggies, pineapple & canned chicken topped with chow mein noodles
- Rice-a-Roni stir fried rice
- cream cheese wontons (frozen)
I have made Indian curries many times but was unfamiliar with Japanese curry. I heard about this from an online friend and found the curry on Amazon. It was absolutely delicious!
- Japanese curried beef, carrots and potatoes
- rice
- toasted pita bread
- chilled apricots
This turned out so good! I made a thick, seasoned white sauce, mixed it with chicken broth and the rice. I placed well-seasoned chicken drumsticks on top, covered with foil and cooked until the rice was tender, removed the foil and cooked another 15 minutes or so until the liquid was absorbed.

I’ve made this recipe a couple of times and it’s a keeper.
- Mediterranean ground turkey with extra vegetables and topped with feta cheese

I made this meal knowing my mom would like all of it. I made up two covered plates for her.

- corn on the cob

I got the recipe for this one from this YouTube video. We really enjoyed it and it was very easy. I served it with warmed pizza sauce spooned on top.

There’s nothing quite like a fall-apart-tender pot roast. This night I served it with twice-baked potatoes.

This breakfast casserole was made with cooked sausage, homemade gravy, O’Brien potatoes (frozen with peppers & onions), eggs and grated cheddar cheese.

This is another recipe I saw on Julie Pacheco’s YouTube channel. Click here for the written recipe. I was out of spaghetti sauce so I used the rest of the jar of pizza sauce from the night I made calzone, along with a carton of diced tomatoes. Instead of ground beef, I used half of the package of ground sausage I had cooked the night before for the breakfast casserole.
