Our weekly menu…
It’s Wednesday night as I’m writing this post and so far, we are on track with my planned menu.
On Monday night I took the leftovers from our roast chicken dinner on Sunday and made a delicious “chicken cottage pie”. I picked the meat off the bones and mixed it with the leftover roasted carrots, peas, broth and gravy. I put this in the bottom of a baking dish, topped with the leftover mashed potatoes, sprinkled some grated cheese on top and baked. It was SO good! The three of us ate it for dinner and there was enough left for David and I to have for lunch on Tuesday.
In addition to our usual tacos on Tuesday, I also made Spanish rice and refried beans. I did that intentionally so that I’d have leftovers for a Mexican casserole on Thursday. I’ll serve it with the avocado I bought, as well as some tortilla chips and salsa. Easy meal!
Tonight I made a really tasty meal with cabbage, red potatoes, onions, sausage and grated cheese. I had some leftover biscuits in the freezer to go with it. I had intended to make a salad but decided we didn’t really need it.
