December can be a very busy month with all the holiday activities. It’s all too easy to just give up menu planning and opt for takeout. However, I think it’s still worthwhile to make a plan each week, even if you occasionally have to abandon it and pick up a pizza. Keep your menu simple and save the more time consuming meals for January when there’s nothing going on and it’s too dang cold to go anywhere.
DEE’S MENU
The week ahead looks pretty “normal” to me. A couple of meetings, David out of town once and hopefully a Saturday “date night”. We might even find time to put up the Christmas tree!
Monday:
I have a meeting at 5:45 and David has one at 6:00. Dinner needs to be quick, easy and EARLY!
- tuna noodle casserole
- asparagus
- salad
Tuesday:
David will be out of town so that’s always a good time for Chris and me to enjoy fish. And since it’s “Taco Tuesday”…
- fish tacos
- coleslaw
- french fries
Wednesday:
This is another night for something easy since we need to be at our church Advent service by 6:15.
- Cheesy Rice and Bean pie (vegetarian – recipe coming soon)
- tossed green salad
Thursday:
- chicken patties
- roasted zucchini with parmesan
- pasta with marinara
- salad
Friday:
- turkey and noodles (from the turkey and broth I froze after Thanksgiving)
- homemade bread
Saturday:
Date night?
Sunday:
We’ll eat Mexican food after church and just a light snack for dinner.

I’m working on using up some stuff I’ve had in the freezer and cupboards for a couple of months. It will both help use things up so I can restock after the new year, and keep my grocery bill low so Christmas shopping doesn’t hit my bank balance so hard. After making a list of what I have on hand, I’ve figured out I can make meals to feed myself for the rest of the year with only minimal shopping (and that’s mostly things like my plant-based milks and cheeses, and various perishable items I have to buy near to when they’re actually needed) and will be picking meals off that list each day for most of December.
