I’m writing this very quickly late Saturday night. David is taking me to the city tomorrow after church and we won’t be back until Monday afternoon. I’m not entirely certain how this week will shake out so this menu isn’t set in stone. Of course, that’s true every week. Sometimes things change and we adapt. But I still like having a basic plan in place.
DEE’S WEEKLY MENU
Monday
We went out for barbecue on Saturday night and we both had a huge amount of leftovers. I’ll toss a green salad to go with our leftovers.
Tuesday
I didn’t end up making this meal last week so we’ll try again. This is one of those Pinterest recipes I said I would try.

Wednesday
My aunt sent my mom some of the wonderful corn tortillas we all love from California. Mom mentioned having us over for tacos one night this week.
Thursday
We may be hosting a meeting at our house in which case I need to make something that we can eat early and won’t have a huge amount of cleanup.

Friday
I’m going to the city to meet my cousin for lunch and then might meet up with a friend later. If that happens I won’t be home for dinner.

We’ll eat out after church and save half for dinner.

What’s on your menu this week?

You won’t be surprised to hear that I don’t have anything specific planned for this week…you know I mostly fly by the seat of my pants. 😉 I know I’m going to make some kind of soup one day because I like to keep homemade soup in the fridge for quick meals. I also might be doing something with a pork tenderloin one night this week. Thurs. night I’m going out to dinner at an Italian restaurant with a friend. Hubby’s working late a few nights this week so I don’t make dinner on those nights. Soup comes in handy on those nights for myself. Have a good week!

I love soup. I keep thinking I should get into a routine of making a big pot of soup at the beginning of each week just to have on hand. If you do make something with a pork tenderloin I’d love to hear about it.

I’m away from early on Thursday morning until late in the day next Tuesday, so there’s not much cooking happening for me this week… Especially since I want to keep things simple, and use up anything hubby won’t eat that needs to be used up, during the couple of days I’m here this week. So, here’s what my week looks like:
Monday: I had a meal of veggie shepherd’s pie in the freezer, so I pulled that out and heated that up.
Tuesday: I have a tomato in the fridge, so I’m thinking cheese omlett with fried tomatoes and toast.
Wednesday: this is the evening before I go away, so it will be whatever I can find that doesn’t take much work to make, and makes very few dishes, since I don’t want to do more than I have to the day before I need to travel.
Thursday: I’ll be with my Mam in Wales, and she’s making quiche (my favourite thing that she cooks). I think I’m having it with chips (as in fries) and baked beans.
Friday: I’ll still be with Mam… Not sure what we’ll be having for dinner though.
Saturday: it’s my Dad’s girlfriend’s birthday party that day, and I’m going to it (actually, that’s the main reason for me going away). I’ve been assured there are vegetarian friendly options among the foods on offer, so I’ll just eat at the party.
Sunday: I’ll be with my Dad… Not sure what he’s making for dinner.
