This is going to be a short menu. David and I are taking the train to Austin, Texas on Thursday. I can hardly wait!
Monday:
I cooked a big turkey dinner Saturday so we have lots of leftovers. I boiled the carcass for broth and picked off the little bits of turkey.

- salad
Our “other son”, his girlfriend and baby are coming to visit this afternoon so I might dig out all those pieces of bread, buns and rolls I’ve been squirreling away in the freezer and make bread pudding to serve them during their visit.
Tuesday:
A couple of David’s business associates will be in town so we are all going out to dinner.
Wednesday:
- broccoli cheese soup
- biscuits
And that’s it for me. I’ve got a fresh pineapple in the fridge, as well as several other types of fresh fruit. I think I’ll make a fruit salad that we can enjoy with lunches or as snacks. I’ll then freeze any leftovers to use in smoothies. I’ll also cut up and freeze any fresh veggies that won’t make it through the weekend and then throw them in soup sometime soon. Soups and smoothies are my favorite ways to use up things that might otherwise go to waste.
