I’m writing this Sunday evening with a rather unpleasant cold and asthma symptoms. The truth is I really don’t care about this week’s menu right now but I’ll be glad I have a plan in place.

Dee’s Menu Plan
Monday
We were going to have my parents over to celebrate my dad’s birthday and watch the Rose Bowl (we are all USC fans). Unfortunately I came down with a cold and don’t want to pass it along to them. I’m hoping we can do it Thursday so that’s where I’m putting the meal I had planned to cook for them. Instead, David and I will be eating leftovers from our New Year’s Day dinner.

- smothered cabbage
- rice
- black eyed peas (I made these in the Instant Pot – easy!)
- biscuits
Tuesday
- au gratin potatoes with ham
- broccoli
- salad
Wednesday
- gumbo
- French bread
- potato salad if I feel up to making it
Thursday
- lasagna
- green beans
- salad
- garlic bread
Friday
The kids are coming over for dinner and to play games. Our son’s birthday is the 10th so I think we’ll go ahead and celebrate that, too.

- salad
- French bread
- cherry pie (Chris’ favorite!)
Saturday
David is doing all-day firefighter training Saturday and Sunday. I’m taking the opportunity to do some decluttering/deep cleaning. I think we will both deserve take-out.
Sunday
At this point I have no idea. Probably something simple like quesadillas and tomato soup.

Dee, I recently started making your very simple tomato soup – so easy and delicious! My husband loves it and it has given me another simple meal plan idea. I pair it with oven-toasted pepper jack cheese sandwiches. Yum! Thanks for sharing the recipe!

I’m glad you enjoy it. I love the idea of serving it with pepper jack cheese sandwiches and I happen to have some pepper jack in the fridge. I’ll give that a try!

Hope you feel better soon. I also hope you get to celebrate your Dad’s birthday as planned, and that you enjoy the early celebration for your son’s birthday too.
I made a veggie bake yesterday (Monday) and have the leftovers for today (Tuesday). I’m not really sure about the rest of the week though. All I know for sure is that dinner for the rest of this week needs to be of the quick and easy variety, with minimal clean-up required, because I have a busy week ahead including errands to run in town, a guy coming to look at our boiler (it’s not broken, but will possibly get some maintanence or something in the near future) and an appointment with a nurse to get shots we need so I can make use of one of my Christmas presents. Not to mention, I need to take the decorations down on the weekend too.

I hope you’ll feel better soon. You can never go wrong with lasagna, and I’m a bit curious about gumbo as I’ve never tried it (feel free to laugh, but it’s not something that’s often made in Norway).

Oh, I wouldn’t laugh. Until pretty recently it wasn’t all that commonly made outside the region where it originated even here in the States. I’ll do a blog post about it soon.
