Well, here it is, the start of a new week and time to make my weekly menu. You’ll notice a couple of repeats because I didn’t end up making those meals last week. The best laid plans…and all that.
Dee’s Menu
Monday
- Leek and potato chowder (recipe coming soon!)
- Homemade Cheddar Biscuits
Tuesday
- Macaroni and Cheese with Caramelized Onions
- glazed carrots
- salad
Wednesday
David’s boss will be in town so we will go out to dinner with him.
Thursday
David will be out of town so I’ll just have leftovers or a salad.
Friday
- Gumbo
- Homemade potato salad
- rice
Saturday
This may be wishful thinking on my part. It all depends on how my week goes. But I do have a turkey in the freezer and this is one of my favorite meals. If this actually happens I’ll invite my parents and the kids to join us.

Sadly, I’m deathly allergic to mushrooms which is a real shame since David loves them. I read your blog yesterday and I’m intrigued by the poppy seed chicken casserole. Have you shared the recipe?

I’ve seen it as Ritz Chicken Casserole as well and it involves the simplest things: 4 cups rotisserie or cooked chicken, 1 can of cream of soup (you can use celery or chicken or make your own sort) and 1 cup of sour cream. Crush a tube of Ritz crackers and add 1/2 tsp. poppy seed to that mixture. Put on top of the casserole and drizzle with butter. Bake at 375 until hot and bubbly, usually about 30 minutes.

Your menu sounds good! Tonight we are having Buddha Bowls. I just roasted 2 big pans of veggies and sprouted brown rice is on the stove. I will plate up (don’t have big bowls) the rice, roasted veggies, kale salad and sliced hard-boiled egg. Tomorrow night will be Trader Joe’s chili chicken lime burgers and I’ll make sweet potato fries. Not sure about the rest of the week…my hubby works some crazy hours. We’re having friends for dinner on Saturday night, so I’m still trying to figure out the menu for that night. We rarely have company…and even though they’re really not “company”, I’m still nervous since I rarely entertain.

It’s not much of a menu, but here’s as far as I’ve managed to get with figuring out what I’m eating this week…
Monday: veggie burger, fries, and salad.
Tuesday: cheese salad sandwiches.
Wednesday: I have dentist, and I never feel like eating much after the dentist has pulled me about, not to mention the fact I’ll be tired from the outing, so I’ll probably just have some oatmeal for dinner.
I haven’t decided about the rest of the week yet.

Actually, it didn’t go at all… My dentist appointment ended up cancelled due to bad weather. I haven’t made a new one yet.

That makes two of us! I never used to feel that way about dentists – I used to prefer them to other medical appointments – but after how much hastle and pain dentists have caused me over the past couple of years, I now stick them firmly in the same catagory as all the other doctors I dread visiting.
