This is shaping up to be another busy week. I’m going to Oklahoma City Wednesday, have a meeting Thursday evening, a fundraiser Friday, wedding and party on Saturday, and our air conditioning unit is being replaced at some point this week. I also have plans to go swimming at the gym with Lisa on Tuesday and Thursday. There’s a pretty good chance that my menu plans will be altered at some point but here’s my best guess for the week.
Monday:
I really need to get the house in good shape and all the laundry done today since the rest of the week looks to be rather hectic. I’ll keep dinner pretty simple because I’m likely to be exhausted by that point.
- roasted red potatoes, onions and peppers
- tossed green salad with choice of homemade dressings (bleu cheese or thousand island)
- fruit and cheese plate
- rolls (from freezer)
Tuesday:
I have ground beef in the freezer, as well as potatoes and cabbage which need to be used.
- grilled burgers
- potato salad
- coleslaw
Wednesday:
I’ll be out of town all day. Since I don’t know if I’ll be home in time for dinner I’ll thaw some jambalaya to go with leftover potato salad.

Thursday:
I have an early evening meeting which may run long as we are finalizing plans for our fundraiser the next night. I think this might be a good night for David to pick up a pizza or meet me for dinner at our favorite Italian restaurant.
Friday:
Tonight is the big fundraiser for our local homeless services non-profit. I serve on the board and will be helping in some capacity. This means a quick and early dinner for us.
- quesadillas
- homemade tomato bisque soup
- fruit
Saturday:
We will be attending the wedding of my cousin’s daughter during the afternoon and then we’ve been invited to a party that evening. I’m not sure if David will want to eat out in between or if I’ll cook at home. I can always throw together spaghetti (I have homemade sauce in the freezer) and salad for a quick meal.
