I cooked chicken last night and have an extra chicken breast to use tonight. A casserole, perhaps? I also picked up hot dogs and buns for a quick meal. There may be a night of grilled cheese and soup and very likely a pizza night. I have a fresh pineapple, raspberries, bananas and strawberries so I think I’ll prep all of those – maybe make a fruit salad. I also have a big bag of fresh carrots. I think I will cook a bunch of those to have on hand to add to quick meals. And rice. I should cook a big batch in my rice cooker. With all those things on hand we should be able to stay reasonably fed this week.
I wouldn’t count on a menu next week, either. I know from previous experience that the week after Happyland Music Fest is one of happy exhaustion and recovery.

Have a great music fest! I'm in kind of an opposite place. My every-Tuesday-night band is having the last practice for a good while this Tuesday because the drummer and the bass player are both going for orthopedic operations. So for our Tuesday finale (for a while) we're having a potluck. I'm bringing New Orleans style boiled shrimp:

Friday's our anniversary, and I'm busy with formatting interior files to make my books available in print, so we're having a "grab what you can find" sort of week, which means I have nothing even closely resembling a menu for this week.
Anyway, hope the music festival goes well.
