It’s a new month and that feels like a good time to change things up. So I’m bringing back Menu Monday posts to Life With Dee. I’ve been sharing our menus in my weekly newsletter but I miss having them here on the blog.

Menu Monday
Monday
I’ve been out of town the past three days for a writers conference and haven’t been grocery shopping since my return last night. That means using what we have on hand.
- barbecue chicken
- baked potatoes
- frozen veggies
Tuesday
- black bean burritos
- chips and salsa
Wednesday
Thursday
It’s “East End Eats” this evening so we’ll enjoy dinner from one of the food trucks.
Friday
- spaghetti and meatballs
- tossed green salad
- garlic bread
Saturday
Date night!
Sunday
We have “Music in the Park” this evening. We’ll either have dinner at a food truck or I’ll pack a picnic dinner.

Interesting menu. Using up what you have on hand is a good plan.
I had vegan bean burritos for dinner yesterday (Monday). Tonight and tomorrow I’m having crispy tofu, baked potato, and salad. I haven’t figured out the rest of the week yet.

How do you make your burritos? I need a quick meal this evening so I’m using canned black beans, frozen corn, salsa and seasonings in mine.

I like to make things as simple as possible, so mine are just mixed beans (some canned, some dried that I soaked for a few hours first) thrown in the slow cooker with a can of chopped tomatoes and some seasonings. Then I spooned some of that in to wraps, added a bit of vegan cheese, cooked it for a bit to melt the cheese in (I used the microwave, but you could use the oven) and served.

One of the YouTubers I watch made some with cooked beans and rice, brushed them with vegan butter and baked until lightly browned. She then freezes them. That sounds like a great idea to me. I’m going to try that soon.
