Monday:
I have a hankering for a Thanksgiving meal but seeing as how we are eating vegetarian at the moment, turkey is out (although I do intend to have an organic, free-range, humanely raised turkey for Thanksgiving). But then it occurred to me that much of what I like about Thanksgiving are the side dishes and we can do that.
- mashed potatoes
- green bean casserole (I make mine with an alfredo sauce – I’ll share the recipe later.)
- corn on the cob
- glazed carrots
- layered salad
- homemade rolls
- pumpkin bread
Tuesday:
- Easy Vegetarian Enchiladas
- Mexican rice
- chips and salsa
Wednesday:
- Creamy Artichoke Pasta
- steamed broccoli
- tossed green salad
- garlic bread
Thursday:
- Colorful Vegetable Bake (will share recipe later)
- tossed green salad
- apple cobbler
Friday:
- Scalloped Cabbage (recipe later)
- cooked apples
- salad
Saturday:
- Date Night!
