THIS WEEK WITH DEE
I’m trying to get this post out tonight and it’s getting late! I’ll keep this short.
MENU:
Our days out of town this week shifted a bit after I made our menu as you’ll note below.
Monday…
This was a new recipe for me and it was really good! I added some frozen corn to it and served it topped with a dollop of sour cream, a bit of grated cheddar and slices of avocado.

REVIEW OF LAST WEEK
Monday…
I put off my planned shopping day for Tuesday. I was just wiped out for some reason. I did the “This Week” post, some laundry, dishes, Duolingo, an episode of Gilmore Girls and that’s about it.
We had spaghetti and meatballs, broccoli, salad and garlic bread for dinner.
Tuesday…
I got quite a lot done this day. I washed the sheets and remade the bed, another load of laundry, watered houseplants, emptied wastebaskets, and cleaned the storm door.
David had to run an errand in town so I went to town shortly after he left to pick up a few groceries for Mom. We then met up at a convenience store at the turn off to her house so he could ride with me and carry in the very heavy box of cat food I’d ordered for her. I had also bought her a burger and fries. We both decided it smelled so good that I went back to town to pick up burgers for us after we’d been to Mom’s while David drove on home.
Later that afternoon I had a Zoom call. I also wrote a blog post, did a Duolingo lesson, scheduled some social media, journaled and read.
I made tacos, Spanish rice, tortilla chips and salsa for dinner. Afterwards I watched an episode of Gilmore Girls.
Wednesday…
I did the usual daily household tasks – bed, dishes, laundry, tidying up. I also wrote a blog post, read, journaled, and did a Duolingo lesson.
For dinner we had Mediterranean Turkey and Veggie Skillet and salad.
It was a lovely night and I took advantage of it with about 45 minutes of stargazing. It was so nice!
Thursday…
Charlotte told her parents that she was running away to Gramma and Grampa’s house on her tractor. When we heard that, we decided she needed an outing. And her mama might need a break – ha!
We picked her up, bought lunch at Sonic and then went to the park to eat and play. There is a really nice piece of playground equipment that looks like a pirate ship. She played on it quite awhile, threw rocks in the creek, played on the swings (Gramma got to swing, too!) and then walked over the bridge and back to the pirate ship.
We all three had a great time!
I made bbq chicken, baked potatoes, stuffing, green beans and cranberry sauce for dinner. Yummy!
Friday…
We needed to check out some tile and flooring options for our bathroom in the city so we figured it was a good excuse for a night in a hotel. We had hoped to get out of town around noon but that didn’t happen. We had a few errands to run on our way out of town so it was close to 2 p.m. when we left.
We checked into our hotel, had pre-dinner drinks and then went to a favorite restaurant on Lake Hefner. The weather was perfect and it was so nice to enjoy the sunset as we ate our dinner.
Saturday…
We checked out of our room around 10 a.m. and then went to a few tile and flooring stores. We are really no closer to making a decision.
It was nearly 5 p.m. when we got into town so we picked up pizza before heading home so we wouldn’t have to make another trip to town.
Sunday…
I did our weekly menu, scheduled social media, placed our grocery order, wrote a blog post, and did some housework.
THIS WEEK
Monday…
David had an appointment with his dermatologist this morning to have a suspicious place checked on his arm that wouldn’t heal. Fortunately the doctor said it wasn’t a serious form of skin cancer. He removed some of it to send to pathology and scheduled him to have it removed next month.
I made the green beans Mom likes, as well as four containers of mashed potatoes topped with cheese for her.
This afternoon I picked up my grocery order, a chicken quesadilla from Taco Mayo for Mom (she really likes those and they reheat well), a few things at Braum’s (although they were out of the gallons of sweet tea Mom likes) and bread from the convenience store. I then took Mom’s food and groceries to her.
When I got home it was time to start dinner. I made Spicy Black Bean and Potato Stew which was really good! There were plenty of leftovers, as well. That will work out well for Chris tomorrow night as David and I will be out of town.
After we ate dinner and cleaned the kitchen, I worked on scheduling social media for this week, did a couple of Duolingo lessons and then started on this blog post.
Tuesday…
The tile guy is coming at around 9 a.m. to take a look at the bathroom David is remodeling and give us the input we need before we can decide on flooring and the shower or tub surround.
Afterwards, as soon as we can get ready we will head to Vidor, Texas. David needs to meet with employees there.
Wednesday…
David will go to the shop for a few hours while I stay in the hotel and hopefully get some reading done.
Thursday…
If all goes as planned, we’ll head home.
Friday…
I hope to get some blog work done.
Saturday…
I want to finish my fall decorating and some extra house cleaning. Speaking of decorating, here are a couple of photos of the fall decorating I did in our downstairs bathroom.
I have a few more things to add but I’m pleased with how it has turned out. The towel hanging next to the window goes perfectly with the curtains. After I had put out the first things I bought, I decided the room needed a black and white check rug which I found on Amazon. You can see a bit of it in the photo above.

Trust by Hernan Diaz (I’m about 2/3 of the way through. Should finish it while out of town this week.)

I had meant to color my hair last week but didn’t get around to it. This weekend for sure!
HEALTH & FITNESS
I’ve not done well in this area. At all. I’m not exercising, not sleeping enough and not drinking enough water. I must get with the program!
FUN ACTIVITIES
I want to work in at least one night of stargazing, some coloring and lots of reading.
