I haven’t done a What’s For Dinner post in awhile and I decided to change it up a bit. Instead of sharing a picture of each meal we’ve had I’m going to share 25 dinner ideas. These are meals we’ve had recently, minus the photos. Those posts take too long to load. Some of those sound really tasty (or sound like they would be with minor tweaks, like swapping out the meat part for some tofu, or leaving it out).
Here’s what’s been cooking at my house. Obviously, whenever I mention
cheese I mean a vegan alternative. Many of the meals I’ve had more than once, or were intentionally cooked to feed me for two days.
Vegan cheese and broccoli quiche, cabbage, cauliflower, and potatoes.
Jackfruit poorboy and chips (fries).
Tofu curry with rice.
Baked potato, broccoli, carrots, and garlic mashed parsnips.
Chips (fries) and spicy baked beans.
Garden party pizza and Cauliflower wings.
Root vegetable mash with cabbage.
Baked potato with cheese and beans.
Tofu scramble, baked potato, peas, and carrots.
Chilli and potato wedges.
Maple-mustard tofu, baked potato, and salad.
Sweet and sour tofu with rice.
Baked potato with cheese and chives, plus salad.
Stirfry tofu, mushrooms, and onion, served in a wrap.
Chips (fries) and sweet-and-sour sauce.
Caulie wings and tater tot’s.
Leftover caulie wings, plus rhubarb crumble with oat custard.

I really must try to find some jackfruit. It sounds so versatile!
It really is. I tend to use more tofu than jackfruit, but both can be used to make a variety of dishes, both sweet and savory (though I confess to not having tried using either in anything sweet myself yet). Like tofu, jackfruit takes on the flavour of what you marinade and/or cook it in, so you can make it taste how you want.
As for finding jackfruit: a lot of wholefood stores and supermarkets carry it now (look for it in the canned fruits section if you’re checking the supermarket) and you can get it on Amazon. Make sure you get the kind in water, and not the kind in syrup, because the kind in syrup can only be used for sweet recipes, where as the kind in water can be used for anything.
I need to check Amazon. Our shopping options are pretty limited for “exotic” items here in our small town and I have no idea when it will safe to travel to the city to shop.
