Well, this was one of those fairly unusual weeks when very little of my menu plan actually happened.
Monday: I took food and groceries to my mom and ended up at her house until after 7 p.m. I knew that it would take me well over an hour to cook the planned dinner so we wouldn’t have been able to eat until nearly 8:30 p.m. Instead, I picked up chicken strip dinners from Braum’s.
Tuesday: This night went as planned and we enjoyed our tacos and homemade guacamole.
Wednesday: I had originally planned to bake some cod for Chris and myself, and a piece of frozen parmesan herb encrusted chicken from Aldi for David. Chris went to the city so I just did chicken for David and I both, along with the planned baked potatoes, veggies and salad.
Thursday: Lisa and I went to the city together to see a museum exhibit and since it was about 6:30 when I got home, I picked up French Dip sandwiches from Arby’s for dinner. Chris was still in the city.
Friday: We met up with friends for a drink after work at a wine bar with a nice outdoor area. We ended up chatting for a couple of hours. By that point none of us were interested in cooking dinner. We considered a few options and ended up ordering takeout from our favorite Italian restaurant which happens to be next door to the wine bar.
Saturday: David and I ate leftovers from our Italian dinner for lunch and I still had some of mine left, as well as part of a cup of creamy artichoke dip. I combined these with chicken broth and leftover veggies to make a really tasty soup. We still had several pieces of toasted bread that came with the dip so I heated those to go with our soup.
Sunday: Chris picked up Jimmy John’s sub sandwiches for all of us for lunch. We each saved half and I heated a can of tomato soup to go with them for our dinner.

Thanks, Terri! Btw, I keep meaning to comment on some of your blog posts but I tend to read them on my phone very late at night in bed and then forget by the time I’m on my computer the following day. But I do want you to know I read every post and always enjoy them. 🙂
