Recipe:
Finger Lickin’ Chicken
Wash and pat dry 1 whole chicken cut into pieces
OR 4-6 chicken breasts
OR 6-8 boneless skinless chicken breasts
Mix together:
6 Tbsp Mayonnaise
2 Tbsp Lemon Juice
1 Tbsp Vinegar
2 tsp Salt
1 tsp Pepper
1/4 cup Thousand Island Salad Dressing -this measurement will depend on how runny the dressing is, you want the final product to be thick. You can add more mayonnaise (or even sour cream) if you need to thicken it.
Brush or spread a nice thick layer over chicken. It should cling to chicken so you can put it all over chicken instead of just on top. Bake at 350 for 1 hour or till chicken is done and coating is slightly brown.
Not going to lie: as someone who despises both mayo AND thousand island dressing, the chicken sounds pretty gross.
However, homemade soup and homemade bread? Yes PLEASE!
I’ve served this to other mayo haters who loved it. It just makes the chicken really moist with a flavorful coating. You’d never guess the ingredients.
