I’m sure we can all agree that 2020 was just plain weird. My sense of time was skewed and sometimes I felt like I wasn’t accomplishing anything. And that’s why I was surprised to discover that I actually managed to share 16 recipes here on the blog. I would have guessed maybe 6-8. I’ve collected all LWD 2020 recipes in this one blog post for your convenience, as well as a bit of a glimpse into the year of the pandemic.

LWD 2020 Recipes
I think it’s easy to see that my 2020 recipes focused on simple, pantry basics as well as a few comfort desserts. If I had to pick one recipe to represent the year it would have to be the Fresh Banana Cake. While everyone was turning their overripe bananas into banana bread, I took it to another level and made cake.
I also shared a few vintage/Depression-era recipes which made good use of easy to locate ingredients and pantry staples.
I’ve opted for grocery delivery from Aldi (via Instacart) during the entire pandemic (and continue to do so) so my options have been somewhat limited. At various times we’ve faced shortages of certain items. Many times I’ve had to accept substitutions or just do without.
I also soon learned that it’s best to stick to “sturdier” produce since I’m relying on someone else to do the selections. The big containers of organic mixed salad greens that I normally buy turned out to be largely a waste when the date was only good a day or two after purchase. Iceberg lettuce and spinach have been safer options.
I don’t intend any of that to sound like a complaint, however. I’m extremely grateful to the Instacart shoppers, many of whom have done an admirable job in difficult circumstances. And while some items have been unavailable at times, we’ve always had everything we truly need. I know many are struggling financially and the extra fees for grocery delivery aren’t an option for them. They have to take their chances of viral exposure to do their own shopping.
All things considered, I’ve found myself more grateful than ever for the simple act of being able to feed my family.

I remember a few of those being posted, and trying out a couple of them too. 😉 As for ones I’d like to see… Any kind of vegan recipe, regardless of origin. Or vegetarian ones that can be easily veganized.
